Unfortunately, it hasn’t been out to use yet as it’s part of a gift for my son’s wedding . It’ll be used to cut his wedding cake with his bride on Sept 5th.

If you're in the market for a top-notch kitchen knife, I highly recommend this one.
The blade is great! The handle is lovely BUT the metal circles stick out a bit from the wood handle and with means it doesn't feel great in my hand. The finishing touches are missing that would make the handle smooth and more comfortable to grip.
Simple but elegant in its design.
First off, I like the overall profile of this bread knife. Similar to a Japanese sujihiki (slicing knife) it's thin (width wise) and tapers to a point, unlike the standard bread knife design, which is shaped more like a ruler with a rounded or curved tip. From a functional standpoint, perhaps it doesn't make much of a difference, but aesthetically it does make this bread knife unique and in line with your standard knife profiles.
I would have preferred a thinner spine (and overall thinner blade thickness) as the overall weight is pretty hefty for a bread knife, but it can also be considered a very solid build and may not affect the overall performance of its slicing capabilities.
The tri-clad blade (soft steel sandwiched over a harder edge steel) with an exposed wavy edge of the vg10 core steel is beautiful in its simplicity. With a Rockwell hardness of approximately 60, this bread knife (with care) should last a very long time without the edge dulling.
On the other hand, the full tang handle is on the thin side, but it too is well balanced with the weight of the blade. The riveted beech wood looks and feels good in hand and respects traditional Japanese design. From a functional standpoint, the thinner handle may also help in providing extra knuckle clearance.
As a Canadian citizen of Japanese ancestry, I think this is a great collaboration between Japanese Blade Smith and Canadian woodworkers. This was the reason I felt so inclined to make this purchase. Price was reasonable and fair for its value.

Great cutting, great balance, great looks and will be a family heirloom. Couldn't buy it in New Zealand (home), so got it through my Canadian in-laws. Well worth the wait!
La série Classic est l'entrée de gamme de Hazaki. Le couteau Gyuto de la série Pro avec le manche en bois de loupe d'érable stabilisée m'a littéralement coupé le souffle par sa beauté, sa douceur et son efficacité. C'est définitivement mon couteau préféré.
La série Classic utilise une très belle lame épuré en acier oxydable plaqué avec une soie de type VG10. La coupe est fantastique. Par contre, le rivelage n'est malheureusement pas au point. Le manche est légèrement inconfortable. Je présume que le bois a séché et a perdu de sa densité.
Le couteau est fidèle à la description qui en a été fait. De belle facture, la lame de haute qualité se marie parfaitement bien au manche. La couleur est juste géniale. Le processus de livraison a été sans failles. Je suis très satisfait. Merci pour cette oeuvre d’art!
