This is my second hazaki knife, the first one is same knife with the walnut handle. Second knife with the black maple handle, gave to my son. We both enjoy using them. Cooking professionally for forty years, my only regret, was not getting one sooner. Thanks for the great knifes.
I love the knife. But during the shipping, they was not a lot of stuffing paper and the knife was out of the box. Better to put elastic when it’s shipped.
We have four Hazaki Maple Burl knives and use them every day. They are truly great knives, whether slicing very thin or cutting though cabbage or carrots. They feel good in your hand and look fantastic displayed on the magnetic knife holder. Highly recommended.

After 20+ yrs of working with my authentic (made in Germany) Zwillings/Henckels, I decided to look into Japanese knives. Did a lot of research (many fakes out there) and came upon great youtube reviews by Knife Wear, Canadian - Japanese knife retailer. Among their top 5 knives was a Santoku by Hazaki Knives out of Montreal. Based on the reviews, I went ahead and ordered the Maple Burl Office and Santoku.
First, these knives are just absolutely beautiful. The marriage of Japanese steel and Canadian maple is stunning and the quality of the finish is impressive. But more important is the cutting ability of these knives. Scary and amazing! I feel like I've been driving tanks for the last 20 years and have just graduated to a Ferrari - the difference is astounding.
So, I've decide to order the Gyuto and the Petty, plus the beautiful maple magnetic block. You don't want to hide these beauties!
Ce Santoku à l'apparence Bunka de la nouvelle série Pro est un excellent couteau. Bien que j’aie été déçu au départ de voir que la lame avait une longueur de 165mm (plutôt que de 180mm), j’apprends à apprécier la taille lorsque je ne coupe qu’un ou deux légumes.
Certes, on a droit à un acier VG10 assez typique dans cette gamme de prix ou même moins cher, mais la qualité du manche en loupe d’érable et la finition de celui-ci est nettement supérieure à ce que les 280$ suggéreraient. Je possède des couteaux plus chers qui ont une qualité de finition inférieure, alors je suis agréablement surpris. C’est aussi un acier plus facile à travailler, alors pour ceux qui aiguisent leurs couteaux eux-mêmes, c’est positif.
Mon seul point négatif serait par rapport au poids : le poids plus élevé du manche en loupe d’érable par rapport au noyer fait en sorte qu’un si petit couteau pèse plus de 162g. Certaines personnes apprécieront un poids plus élevé et balancé un peu plus vers le manche, mais pour ma part, ce n'est pas ma préférence. Cela étant dit, ça n’enlève rien à la qualité générale du produit!
Si vous avez la chance d’obtenir un de ces couteaux, gardez-le loin des matières dures comme les métaux, les os et des produits congelés et lavez-le à la main, et il devrait vous servir plusieurs décennies durant.
